how to say it in English?

Crustaceans like Crabs, lobsters, or shrimp... when they grow up, they will leave the old cover (the layer which cover its body), replace the new one... I don't know how to call and define this layer in English? Please help me... Many thanks

    In everyday language the exoskeleton of crabs and crustaceans may be referred to as the shell. (when you eat them you would say you have to remove the "shell" not the exoskeleton)

    It is commonly called the exoskeleton. When the exoskeleton comes off, this is called moulting. So, the shrimp moults its exoskeleton.

    These animals have their skeleton on the outside of their bodies, unlike vertebrates which have their skeleton on the inside.

    'Exoskeleton' would be the scientific term, but you could say 'skin', 'shell' or 'husk'.
