How and where can I convert $NT1 coins into usable money?

A LOT of $NT1 coins.

Update:

It's probably a few kg - accumulated over the last 4 years or so. Guess that'll be out of 7-11's league, so I'll have to try the banks. I'll be leaving Taiwan soon, so need to change it.

    If your still in Taiwan you can try going to a bank and see if they will convert them to something larger like 50 dollar coins or if you have enough into 100 or 500 dollar bills. Sometimes it works sometimes it doesn't but you can try going to a 7-eleven and see if they will exchange you for the coins. Usually it works better if there isn't a lot of them. The most I ever got them to change for me was about 500NT.

    If you are in the US you can try going to major banks to see if they do conversions, if not you will have to go to an airport. I am not to sure about other places.
