Is it unproffesional to address the reader in an essay one composes as "you"?

It depends on the type of essay. Generally, it is unprofessional, but if it is an instructional essay or a call to action ("Only YOU can prevent forest fires) it's okay.

Yes, you generally do not want to call the reader "you" in your essay, unless it is a message directly to the reader.

Instead of saying "you must smile to brighten another's day," you should say "one must smile to brighten another's day."

    Substitute you for one.
