Why do Mexicans call soups sopes and sandwiches tortas when torta means cake?

Depending on who's speaking, torta means several things. A "turtle" is one meaning. And, indeed, the torta looks like a turtle.
Sope is a Mexican dish, made with corn meal & a red sauce. It can be describe as a sandwich.
Again, Sope can mean several things: Stinky, for one.

Sopa = soup
Sope = sort of a thick corn tortilla with toppings
Pastel = cake
Torta = sandwich in Mexico
Torta = cake in some Spanish speaking countries and in other languages

Not sure. I know soup is sopa, but when I tried sandwich on a translator it just came out sandwich. Go figure.

The most common last name in China is Wang and it can mean a ruler or king. In some parts that is a comedy word. You can go on all day though, why is a dog called a dog? But not everywhere, it's a chen in France.
