    If I were interested -- refers to the present and means at this point you're not.  This sentence is in subjunctive mood.

    If I was interested -- would refer to a time in the past when you were most likely interested.  This sentence is in indicative mood.

    Given "if", the correct word is were.

    This is subjunctive mood, indicated by "IF".  Formal construction is:  If I were interested.  Normal (conversational) construction is:  If I was interested.
