Is there a name for a 3 dimensional array of numbers? A generalization of a matrix. ?

I know a rank 3 tensor can be written as a 3D cube of numbers. But not every cube of numbers is a tensor.

Is there a way to multiply cubes of numbers together? An analog of matrix multiplication?

Of course. The tensor product of two rank three tensors is a rank 6 tensor.

     Tᵃᵇᵈ⊗Uᵉᶠᵍ = Vᵃᵇᵈᵉᶠᵍ

Obviously, you can represent that as a matrix of numbers.

They are called multidimensional arrays, and yes you can perform operations like multiplication on them.
