How often do giant sinkholes just appear and swallow homes?

A couple-few times a year perhaps, around the world.  Landslides are a lot more common.

Sinkholes don't operate on timetables.  The number of sinkholes that appear in locations and times depends on the geology of the area. In some areas of the world which experience freeze and thaw cycles the water forms cracks in the underlying strata.
