If I cook up and drain sliced bacon and then vacuum-pack it how long will it last?
Do I need to keep it refrigerated or will room temperature be ok.

Refrigerate. But not long, no longer than if not vacuum packed. The reason is the bags while nearly sterile are not completely sterile after the inside is exposed to air. In the freezer a couple of months. The reason the cooked bacon in the store can last so long is that it is heated after sealing to pasteurize.

It should last a few months in refrigeration. I work in the meat dept of a supermarket and we have the precooked bacon. Normally has a 3-4 week sale date on it. must remember to press out ALL the grease.
