your pork chops will stay moist if you fix them like this. beat one egg in a bowl, dip the pork chop in egg and then in flour and fry until golden brown. season with salt, pepper and seasoning salt. you could open a can of butter beans and season with alittle bacon grease. you could also fix some oven fries, peel potatoes, cut into slices length wise like a french fry, place evenly on a greased baking sheet and season with salt and pepper, bake at 400 for 30-45 minutes turn over half way thru cooking.

If chops are boneless stick a bunch of them into a crockpot with a nice bottle of BBQ sauce. Yummy barbequed pork! Serve on a nice soft bun and maybe some homemade slaw on the side (or in the sandwich is how we like to eat it!)

You can always use Shake N Bake, too. It does keep them moister. Just be sure you don't overcook the chops. I always LOVE applesauce with pork chops. I'll actually dip each bite into the sauce before eating. Shake N Bake chops, applesauce, fresh green beans...actually a pretty tasty meal!

If you have a crock pot and are willing to start in the morning, here's my family's favorite recipe.

Mix flour (maybe 1/3 cup--I don't measure) with pepper and seasoning salt. Coak pork chops and fry in small amount of oil for a cuuple minutes on each side. Sprinkle packet of dry onion soup mix over the chops. Cover in water. Cook in low crock pot for at least 6 hours.

Serve with mashed potatoes. The sauce over the chops becomes a nice gravy.

    Hiyah

A couple of simple ways to ensure they don't dry up.

    1) Invest in a large wok pan with a glass lid. Use fry light and brown the chops off over a high heat with the lid on - this will steam the chops and they will retain the moisture and flavour.http://compare.ebay.co.uk/like/270670148237?var=lv...

    2) Use a metal tray put the chops in then cover with chicken gravy. The chops cook and absorb the gravy flavor without dryng out. Discard the gravy once the chops have cooked and serve with rice. My husband always loves this dish.

It is usually hard to keep pork chops from drying out. I no longer buy them.

But you can try this reciep from:

    http://www.cooks.com/rec/view/0,1727,146171-251203...

SMOTHERED PORK CHOPS IN MUSHROOM GRAVY:

Pork chops or pork steaks (as many as you need)

    Butter

Sour cream (16 oz. or 1 lb.)

    Mushroom soup 3 cans (10 3/4 oz.)

To prepare pork chops take a frying pan, put in 4 tablespoons butter, while butter is getting hot season pork chops with salt and pepper. Cook pork chops on both sides until brown. Remove and put into baking dish. Do not pour out butter from pan. After meat has been removed add your sour cream (16 ounce) and mushroom soup (3 cans) too butter stirring until all is blended well. After mixed remove from heat and cover. At this time you should put your pork chops into oven and let cook for 30 minutes at 350 degrees. In 30 minutes, pour gravy over pork chops, place back in oven and cook for another 30 minutes. After 1 hour it is ready. It's great served with mashed potatoes, green beans and dinner rolls (wheat).

Best darned pork chops I have ever had

    Mike’s Pork Chops

4 boneless pork chops 1/2-3/4” thick

    Salt and Pepper

¾ C Parmesan cheese, finely grated

    2 eggs – lightly beaten

1Cup plain or Italian bread crumbs

    4 T oil

    1T butter

    Wash pork chops, pat dry

Salt and liberally pepper the pork chops

Dip in Parmesan cheese, coat well, shake off any excess

Dip in eggs both sides, shake off excess

Dip in bread crumbs, both sides

Heat oil and butter in pan over Medium to Medium HI heat. Put pork chops in skillet; cook 6-7 minutes on each side until crisp. Don’t keep flipping them. Cook one side then the other.

    Remove and serve

And I like to serve with this potato casserole

    Parmesan Potato Rounds

4 medium red potatoes, thinly sliced

1 small onion, thinly sliced and separated into rings

2 tbls butter or margarine, melted

    ¼ cup grated Parmesan cheese

    ¼ tsp salt

    1/8 tsp pepper

    1/8 tsp garlic powder

Place half the potatoes in a greased 2 quart or 11 x 7 x 2 baking dish. Top with onion and remaining potatoes. Drizzle with butter. Sprinkle with Parmesan cheese, salt, pepper and garlic powder. Bake, uncovered, at 450 for 25-30 minutes or until potatoes are golden brown and tender. 4 servings.

and you could always serve a salad or another green vegetable with them

I have a recipe that is very yummy, easy to make and for sure will not turn out dry.

Spice them with a BBQ spice mix (or some pepper, salt, paprika, garlic, curry or else... spices you like). Brown them from both sides. Put them in a baking dish. Put some onion rings on top of them. Also top with BBQ Sauce (at least half of the bottle) and a can/bottle of beer.

Cover and bake on 350 degrees F for 45 minutes. Take cover of and bake for additonal 25 minutes.

This tastes great with rice or potatoes.

And if you like it more tropical you also could add some pineapple chunks.

There are some really great recipes here. If you want to try a variation on Joanne A.'s recipe, try using cream of onion soup instead of cream of mushroom. I buy stuffed pork chops from my local butcher and bake them in the oven covered with a can of cream of onion soup mixed with 1/2 can of milk. It's so good and makes a delicious gravy.
