how do i make eggnog?

After looking on google i am confused how do i make eggnog one resipie says you dont have to cook another says you need to cook.yet i ahve tried making a egg custard before and ended up with srambled eggs

i was thinking of cooking eggnog like you do with chcolate a bowl over hot water would this work

can you suggest a good non achoholic eggnog resipie i live in uk so cant buy some

    You can make Eggnog cooked or uncooked!

    This will show you how to do both!

    No Cook-Easy Eggnog Recipe Ingredients

    6 eggs

    3 cups milk

    8 tablespoons sugar

    3 teaspoon vanilla essence

    1/2 teaspoon nutmeg, ground

    Easy Eggnog Recipe Directions

    In a large bowl, beat the eggs using an electric beater (if available).

    By turn, add milk & sugar.

    Continue beating until mixture thickens slightly.

    Add in the vanilla essence & ground nutmeg.

    Cover with plastic wrap and refrigerate until chilled (at least 3 hours).

    Serves: 8.

    Cooked Eggnog

    Prep Time: 15 Minutes

    Cook Time: 10 Minutes

    Ready In: 2 Hours 30 Minutes

    Servings: 12

    Ingredients:

    12 eggs

    1/2 cup white sugar

    2 quarts milk

    2 teaspoons vanilla extract

    1/4 teaspoon ground nutmeg

    Directions:

    1. Place the eggs and sugar into a pan, and whisk until light colored and frothy. Whisk in 2 cups of milk until thoroughly blended. Place the pan over medium heat, continuing to stir until the mixture thickens, and coats the back of a wooden spoon, about 5 minutes. Remove from the heat, and allow to stand 5 minutes.

    2. Stir in the remaining 6 cups of milk, vanilla extract, and nutmeg. Refrigerate at least 2 hours to cool thoroughly before serving.

    Heavenly Coquito (Puerto Rican Eggnog)

    --It tastes its best when made at least one week before it will be served.)

    3 - cans coconut milk Goya

    2 – cans evaporated milk ‘’undiluted’’

    1 - can condensed milk ‘’undiluted’’

    3 – egg yolks + 3 teaspoons of sugar

    1 – 1.0 oz. box of raisins (make sure to separate them)

    3 – cinnamon sticks

    Small piece of fresh ginger - sliced

    4 – cups of water

    2 – teaspoons cinnamon extract

    1/4 - teaspoon ground cloves

    1/8 - teaspoon ground nutmeg

    1 - teaspoon vanilla extract

    1/4 teaspoon salt

    Sugar to taste

    **Optional:

    Alcohol version: Rum to taste: (DonQ Crystal recommended)

    Non-alcoholic version: 2 tablespoons Imitation Rum Extract

    **Garnishment: 1/4 teaspoon ground cinnamon

    Instructions:

    1. In a large saucepan, put the raisins, the cinnamon sticks, the ginger and the water. Let it boil, as soon as it boils, low the temperature to low and let it simmer for 30 minutes. Turn the burner off and set it aside until needed.

    2. Beat the egg yolks vigorously. While beating, gradually add the sugar. It is easier if the sugar is added slowly while beating. Use either in a mixer for seven (7) to ten (10) minutes, or by hand, until the mixture becomes thicker and much paler. Do not over-beat the mixture; otherwise, the egg yolks may become granular. The mixture should be thick and the color should be a very pale yellow. (Remember that if egg yolks are not beaten, the egg taste will come through.)

    3. *Wash the cans* before open. them (we never know where they have been….etc.)

    4. In a large pot pan, pour the condensed milk FIRST, then, add the other milks slowly stirring constantly. Make sure that the condensed milk is completely diluted.

    5. Strain the mix on Step #1 into the large pot pan with the milk mixture, stir…

    6. Using the milk mix in the large pot pan, slowly and CAREFULLY dilute the beaten egg yolks. Add a little bit of liquid mix at the time until the beaten egg yolks are thoroughly diluted. (If this process is sped up, there is the risk of having tiny chunks of egg yolks floating around, …ugh!)

    7. Add the rest of the ingredients, stirring constantly so they mix completely.

    8. Bottle it and put it in the fridge. (Personally, I buy medium-large size bottles of water, toss the water and use the bottles.)

    9. SHAKE WELL *every time* before serving.

    OPTIONAL: Sprinkle with cinnamon as garnishment. I like like to add a cinnamon stick as a stirrer.

    NOTES:

    **The rum can be added at the serving time. I rather make two batches, one with rum and one without.**

    Puerto Rican Eggnog is fantastic.

    1 cup coconut milk

    1 cup sweetened condensed milk

    1 cup evaporated milk

    1 cup white rum, or to taste

    1 cup water

    3 cinnamon sticks

    4 egg yolks, well beaten

    ground cinnamon for garnish

    Anyway, here's the recipe I use. You can exclude the alcohol.

    I think the reason there are different recipes is because you can make it different ways

    250g of sugar

    100g of butter

    1.5 litres of milk

    and 2 eggs

    Just mix together for ten mins then leave 30 mins to curdle nicely :)
