Is my sauerkraut bad?

I forgot part of the method of fermenting your own sauerkrat so here is what happened.

I cut up two heads of cabbage and put them in a large icecream bowl then added seasalt and let it sit with plate over the top as a lid. It never made as much brine as I was expecting so I added some water and salt to it today and then put a smaller plate inside to keep the cabbage below the brine level. But it sat for two days as just cabbage with salt on it and it smells more fermented then I would have expected in two days.

    However, the entire point of sauerkraut was to have a source of Vitamin C that could travel with ocean-going sailors and be available thru-out the duration of the voyage, without refrigeration. So sauerkraut is much less likely than other foods to spoil. Vinegar is like that. What you can do is heat it thru for 15-20 minutes and that should eliminate any microbes that might still be alive, then dice some sausage into it and serve with boiled potatoes + butter.
