Easy and healthy recipes for carrot & coriander soup?
I'm looking for quick healthy recipes for a nice tasty carrot & coriander soup. Thanks!

Everyone loves this super healthy soup, perfect for an easy supper
Ingredients:
1 tbsp vegetable oil
1 onion, chopped
1 tsp ground coriander
1 potato, chopped
450g carrots, peeled and chopped
1.2l vegetable or chicken stock
handful coriander (about ½ a supermarket packet)
method:
Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.
Finally enjoy the soup :)

Chop an onion fairly finely. Grate a couple of large carrots. Sweat the onion and carrot slowly in a large pan with a little oil. When the onion and carrot are at the point of falling apart add vegetable or chicken stock (stock cube is fine) with enough water to make the soup to the thickness you want. You can add ground coriander to the onion and carrot as it sweats. You can also blend the soup if you want it smooth and add a handful of fresh coriander before you blend it.

toss equal portions of shredded carrots or diced carrots and coriander in a crock pot with whatever broth you perfer. Chicken would be good! Cook for a couple of hours on high.

There is a lot of stuff on the internet that is basically fat-shaming diabetics for causing their own diabetes with their bad diet and lack of exercise and general lack of moral fibre. A lot of this stuff is written by non-doctors, often with a supplement or diet or training plan to sell that they claim will completely cure diabetes if only people stick to it.
