Family come dine with me help?

my family are having a come dine with me competition of our own and i'm trying to create a menu.

i've decided that for main course i will serve a choice of stuffed chicken breast or chicken kiev.

i'm not sure what to serve as a side that will compliment the dishes and have no clue about a starter

please help!

    Serve a tossed green salad (but make it different; maybe with sliced pears, walnuts and crumbled blue cheese and use a raspberry vinegrette for dressing); or maybe a spinach salad with hard boiled eggs, bacon, and Italian dressing.

    I would serve the stuffed chicken breast with a side of rice pilaf or parsleyed rice which is pretty and very simple to make. (Just make the rice and add a cup of chopped fresh parley and butter). It is really good and very pretty. You could also find a rice dish that has dried cranberries and nuts in it which is kind of special.

    I would serve fresh vegetables: green beans, corn or maybe a mixture of different complementary vegetables (corn, peas, carrots

    and I would make them with fresh vegetables.)

    For dessert I would serve cheesecake with fresh strawberries, tiramisu cake or peach and blueberry cobbler with vanilla ice cream.

    You can find many great recipes on Allrecipes.com and they will help you by showing the reviews and how many stars each recipe has received. I have found wonderful success with that website.

    TERIYAKI CHICKEN BREAST SANDWICH

    1 c. Moore’s Teriyaki marinade

    4 boneless chicken breasts

    4 submarine rolls

    toppings of choice: cheese, onion, lettuce, tomato, etc.

    Marinate chicken breasts in Moore’s Teriyaki sauce for 1/2 hour. Remove from marinade and drain.

    Spray non-stick skillet with vegetable cooking spray. Sear chicken over medium-high heat turning once. Finish cooking on medium heat.

    Chicken is done when middle is opaque white. Place the chicken breasts on the submarine rolls and top as desired.

    Asparagus Casserole

    2 10-ounce cans asparagus spears, drained

    8-ounces sour cream

    1/4 cup mayonnaise

    juice of 1 lemon

    1/4 cup bread crumbs

    2 tablespoons melted margarine

    paprika

    Calico Corn

    4 slices bacon

    1/4 cup green pepper strips

    1 can condensed cheddar cheese soup

    3 cups cooked corn

    1/2 cup drained, chopped canned tomatoes

    In saucepan, cook bacon until crisp. Remove and crumble. Pour off all but 2 tablespoons of drippings. Add remaining ingredients and heat through, stirring occasionally. Garnish with bacon.

    Garlic Roast Potatoes

    Serves 8-12

    3 lbs, small red, yellow or white potatoes, quartered and unpeeled.

    3/4 cup olive oil

    4 tablespoons (1/2 stick) butter

    12 cloves garlic, minced

    salt and freshly ground pepper

    Heat oven to 400 degrees. Toss ingredients together and spread on a roasting pan. Roast for 30 to 40 minutes, tossing potatoes once or twice until they are brown and tender. Garnish with parsley.

    Place asparagus in a shallow 1-1/2 quart casserole dish. Combine and heat sour cream, mayonnaise and lemon juice. Pour over asparagus. Toss bread crumbs in margarine. Sprinkle crumbs and paprika over crumbs. Bake at 325 degrees for 20 minutes or until bubbly. (Sour cream sauce also good on broccoli and string beans).
