Home made potato salad?

How long is it safe to keep home made potato salad in the fridge. I usually dump it after 3 days & sometimes I feel guilty at throwing good food out.Would it be safe if left longer?

If it has been kept tightly covered and at the proper temperature, then you can safely keep it around 5 days. Sometimes 7, although that can be pushing it. 3 days is a little earlier in most cases.

If it has mayo or sour cream in it it can't be kept too long. I make an Austrian potato salad that has no dairy and it keeps a bit longer.

I think I've gone 5 days with it. Potato salad rarely lasts that long in my house, tho.

    I'm a huge fan :-)

It should be good for up to 4-5 days. After that, it gets kind of separated and watery.

5-6 days and it's still fine. as long as I put it back in the fridge after I'm done eating a portion.

At least 5-6 days,as the mayonnaise preserves it.Mayo has vinegar or lemon juice in it & that aids in keeping it longer.

Sorry, it's not safe to eat after 4 days. And it's not very tasty, either.
