Can I substitute normal cocoa powder for raw cacao?

On River Cottage Veg they did a raw vegan recipe for a choc torte thing made with avocados. I am not a raw vegan but this recipe looked interesting and I would like to try it, especially since avocados are supposed to be really good for you but I hate them in their plain form so maybe this would be a good way of making them palatable! Anyway, the recipe called for raw cacao powder, but would normal cocoa powder work just the same? I assume it is roasted or something. The stuff they had on the show was a paler colour.

If I have to use raw where can I buy it?

The recipe might be something like- raw cacao, agave, dates, avocado- blend together to make a chocolate torte.

    Amazing. It tastes amazing.

In plain form avocados are not my favourite either- you should really make this pudding. It would NEVER belie the avocado. I'm serious . I actually don't like them except in homemade guacomole which I can eat a ton of - but plain avocado with salt pepper and lemon? Nope, I don't like it.

This torte- if it's the one by Jennifer COrnbleet ( or ispired by her) do it do it do it.

Raw cacao is amzing, you can make your own beautiful cocoa- add sugar of any type ( white is fine) and milk whatever to make hot chocolate. For THIS recipe I can REALLY recommend the ingredients they use. Raw cocoa is easy to get hold of and if you like hot chocolate, chocolate brownies, cake, pie anything with chocolate- it will last ages in the freezer and always tastes 10x better in your recipe than using processed Swiss Miss or some other cocoa- even Ghirardelli hot chocolate powder isn't as good.

So the answer is YES, but I know this recipe- to make a chocolate pudding mousse as a filling for the torte and believe me, use the raw cocoa if you can.

Try baking cocoa or Carob is sometimes used as a substitute by those who are allergic to chocolate, the flavor is vaguely similar. Others use it as a healthy alternative to chocolate, since it contains less fat and no caffeine. Look for it in health food stores. Most cookbooks call for cocoa to be substituted for carob measure for measure, but since cocoa has a stronger flavor, you should use less. Cocoa powder has more fat than carob powder, and some caffeine. Since carob burns more easily than cocoa, the recipe may call for a lower oven temperature than is necessary with cocoa powder.
