how does a candy floss machine do it?

It's all very well saying the sugar melts and is spun into thin strands, but how do the strands stay so thin and give so fluffy a final product?

    The trick is that the wheel inside the machine spins so rapidly, the strands of melted sugar are spun through the air so quickly that they rapidly cool and solidify, thus staying very thin. The fluffiness comes from the fact that the candy strands still stay just a tiny bit sticky, so they stick slightly to each other, without totally sticking together in one solid mass.
