What are you having for dinner tonight?

bank Holiday weekend, extra day off yey, so for me it is chicken cooked in white wine, garlic, parsley and served with roast potatoes,and a green salad, yum

    I am thinking fresh Tuna steak done on the BBQ. (as long as the weather holds out!!)

    With some salad and a side dish of fries or seasoned potato wedges to share.

    Couple of glasses of Chardonay to wash it all do with.

    I will have this pasta with grilled eggplant, roasted tomatoes and smoked cheese.

    • 2 pounds firm young eggplant

    • 2 1/2 pounds ripe red tomatoes

    • 1/2 large onion

    • 1 clove garlic

    • 2 tablespoons olive oil

    • 1/2 teaspoon dried oregano

    • Fresh ground pepper

    • 3/4 cup red wine

    • Fresh chopped flat-leaf italian parsley to taste

    • 4 ounces smoked mozzarella cheese, cut in 1/4-inch dice

    • 1 pound fusilli noodles, or other sturdy pasta

    • Salt

    • Olive oil

    Preparation:

    • Wash and trim the eggplants and slice them lengthwise, 1/2-inch thick. Sprinkle them with salt on both sides and leave them in a glass dish for at least 30 minutes to release their excess water.

    • Squeeze the eggplant slices gently, then brush them lightly.. more on the below page..
